Sweet Potato Obsession

Having IBS is a bit of a sucker and being a die-hard foodie makes it even worse because I find myself eating it anyway and suffering with the consequences afterwards.. oops. Finding something yummy that also doesn't mess around with me is such a nightmare...  and then came along sweet potatoes!

Since I first tried sweet potato fries I was obsessed (it's currently joint first with mac'n'cheese - which does me no favours) and now nothing excites me more than getting home and preparing some spicy wedges! What makes my unhealthy healthy obsession even more amazing is the fact that they are actually good for you.. 

"wait, what?" I hear you say..
That's right... sweet potatoes are good for you

One baked, medium-sized sweet potato contains 438% of your daily value of vitamin A (a white potato contains 1%), 37% of your vitamin C, and some calcium, potassium, and iron too. All this at just 105 calories!

So in honour of my crazy love for sweet potatoes I've decided to share my recipe - papa bear approved!

Spicy Sweet Potato Wedges


Ingredients
1kg Sweet Potatoes
1/4 cup Coconut Oil
2 tablespoons Sunflower Oil
1 tablespoon Paprika
1 teaspoon Cayenne Chilli Pepper
1 teaspoon Cumin
a sprinkle of Salt + Pepper


Prep
Preheat oven to 180C
Peel potatoes and cut lengthwise in half, then cut into quarters
Wash potatoes in a large bowl and drain, placing back into bowl
Combine Coconut and Sunflower oil, along with the all of the spices and mix well
Arrange potatoes on a baking tray in a single layer and pop in the oven
Bake for around 20-30 minutes (depending on how you like them, I usually leave them for around 40 mins total as I prefer them quite crispy and brown) turn wedges over and repeat
and finally... Serve!


Did I mention it's the best when you're having a lazy day watching Netflix in bed - snacking never felt so good!
