Baking.... Brownies

It's no secret that I'm a food lover, especially when it comes to desserts. I will always go for a dessert over a starter on any menu! 

My favourite past time is baking... those of you who know me will know I love my late night baking sessions, and you can always rely on me for a delicious and healthy treat. Just ask the Harvey Nichols Stylists, they all love them!

One treat in particular which is insanely delicious is my dark chocolate brownies. When it comes to brownies, there are so many different recipes everywhere, with everyone using different ingredients and making them in their own special way. After experimenting with different recipes and mixing around ingredients, I have finally created my own:

Dark Chocolate and Coconut Brownies

3/4 cup gluten-free flour
1/2 cup cocoa
1/4 teaspoon salt
1/2 teaspoon baking powder
4 tablespoons Coconut Oil (when solid)
2/3 cup Light Muscovado sugar
1 large Egg
2 Egg whites
1 teaspoon Vanilla extract
1/2 cup Greek yogurt

150g Dark or Extra Dark Chocolate  
1 cup of Milk
1 cup Desiccated Coconut
A handful of chopped nuts (optional)


Electric mixer or whisk
1 x Medium bowl
1 x Large bowl
Cup measurements
Medium sized saucepan
8 or 9 inch square baking pan

How to:

1. Preheat your oven to 180 degrees.

2. In a medium bowl, whisk together flour, cocoa, baking powder and salt. Leave aside.

3. In a larger bowl, using an electric whisker, mix together the coconut butter and sugar at medium speed until combined.

4. Add egg, egg whites and vanilla extract to the mixture and continue whisking until it becomes incorporated. Leave aside.

5. Heat up the Dark Chocolate into a pan, on medium heat. Make sure to keep mixing so that the chocolate doesn't burn on the bottom.

6. Once the chocolate becomes thicker, add the milk to make the mixture thicker.

7. Add the desiccated coconut into the mixture and continue mixing.

8. Once combined, leave aside so that the chocolate mixture can cool down.

9. Back to the large bowl, reduce the mixer speed to low, and slowly add the flour mixture into the bowl.

10. Now add the Greek yoghurt and mix gently.

11. Using the melted chocolate mixture, add half of this into the brownie mixture and mix until combined.

12. Pour this mixture evenly into pan using a spatula and bake for 10 minutes

13. Take the pan out and pour the remainder of the melted chocolate mixture on top, spreading evenly again.

14. Sprinkle with some chopped nuts (or whatever you wish)

15. Bake for another 10-15 minutes, until a fork pierced into the centre comes out dry.

16. Leave to cool down and tuck in!
